Disney Run So Much Fun

So I'm back from my Amazing trip from Disney World

So I am going to be posting a lot of info from the trip but also as it nearly Christmas, lots of Christmassy stuff too.

But though I'd start off with posting about my Disney Run.

Firstly had to go to the expo - was so nervous about the run, that there was so much good merchandise saying "I did it" I was too afraid to buy anything just in case I didn't make it.

Well I did get to meet Lumiere so at leas that was worth the trouble and got my goodie bag with my free top in it.

So the race day, it all started at a very early I had to get up a 3am to get the bus at 3.30am - go the free bus from my hotel to the holding Area.

At the holding area they had music blaring out and thankfully a lot of toilets what is it with nerves and the need to wee, it not great!!

I managed to take my mind off the impending 13 miles I would have to trudge and got to meet Remy and his brother Emile.

Although the 2 hours from the time I got to the holding area to the start of the race flew by, and it was time get into the corral and the slow walk to the start line.

Luckily they penned me in as it seemed so ominous especially as they let the corral go one by one and they all started to the sound of fireworks, boom!! RUN! boom! RUN.

So I got closer, closer and then it was READY, STEADY. GO! GO! GO! oh and BOOM BOOM BOOM of our fireworks.

I was off !!

I was a bit of a slow start as you're caught in the pack with the other guys and girls of your corral, but once they'd thinned I was off at I think was pretty good pace.

It was a fresh clear morning and everyone at this point in the race had their energy level high, the first mile went so quickly when I was trying to take it all in.

Between the 2nd and the 3rd mile I passed the 3hour pace setters, so my target in my head which started in just getting round and finishing before the cow catcher got me. My new target was finish and finish under 3 hours.

My confidence grew as mile 4 was coming up as I knew that I would be coming up on Animal Kingdom

It was so, so much fun running through the Animal Kingdom before it was open there was also some photopass by that time I was still feeling really good.

Running and Running, I really wished I brought some head phones as when you left the Animal Kingdom there wasn't really much to see, until you hit mile 11 when you where coming up on Epcot.

I know in previous years they did run the half through Hollywood Studio, but due to all the construction they couldn't so don't get me wrong running through Disney and seeing areas you wouldn't necessarily is great I just though it was bit far between Animal Kingdom and Epcot from a psychological point of view

Disney did try their best and put on entertainment and character to meet (although as I was trying to get round didn't want to stop for pictures)

But as the sun came up it got hot very hot so my pace dropped off I think Mile 8 to 9 was the hardest and I did think at that point if I had a way out I would have taken it.

There was a lot of water and gatoraid stops to keep me going but the sun was hot.

Although as soon as I saw mile 10 Double figures - I felt okay again and knew I was going to complete it.

Didn't help that at around that point that you needed to run up a fly over, I can run but I hate hill it wasn't even that big but my legs were tired. Although I did get to run down the other side.

So I could see the entrance to Epcot, was still a long way off but I knew my Husband and Son would be their to support me and that spurred me on.

After well past the 2 hour mark I made it into the car park of Epcot to enter the park, I thought I would see my family then but I didn't. Did feel a little disappointed and started to worry that they didn't make it and I wouldn't see them.

I put that to the back of my mind as I had the other side to find them.

At Epcot they had the photo pass people too, as you can see there is a big difference between my Animal Kingdom cold morning mile 4 and my Hot sun long run mile 12

I made it round the mile of Epcot and people where starting to come into the park so I got a cheer which really help. Honestly if you ever go to see a run if you see people cheer as it really helps.

So outside the other side of Epcot on the last bit on the run I finally saw my family I was so happy, although I didn't want to stop as the end was so near and I just wanted to make sure I finished and got my hand on that medal

I crossed the finish line, didn't get a good picture boo

Although the feeling I had could be summed up in a picture. I felt amazing I had such a sense of achievement - although did feel a bit sick a bit dehydrated and very hungry.

They lovely people at the end of the run gave me water, a banana and of course my medal

So yay I did it 13.1 miles all that training paid off which made all those early morning an late night runs worth it. I also did it in 2 Hour 54 Minutes - So made it in the under 3 hours mark.

I spend the rest of the day in the medal, hobbling about - your legs do hurt after that amount of running.

But I managed to treat myself!!

So will definitely keep up the running and definitely want to do another Disney Run - hmm thinking of the Princess Half.

Spicy Vegetable Bites

So I haven't done a cooking blog in a while which isn't great if you're supposed to be writing a cooking blog...

My excuse is life got in the way big time.

But calmer now but I'm off to Amsterdam tomorrow for weekend of fun (see the previous Amsterdam trip post and you'll see what I mean lol)

Any who I decided to make a quick, easy low fat and relatively cheap snack. That can be use for parties or in my case so I don't reach for something unhealthy.

You take some frozen veg and leave in a bowl to defrost (used just over half the pack)

So when the veg is nice and defrosted take some dry rice and cook as per instructions. This can just be plain rice but this add a bit more flavour.

Then get two potatoes and a sweet potato.

Peel

And dice.

Then boil for about 20 minutes.

Once they're all nice and soft mash.

Put mash into a mixing bowl.. Alright I know this is a pan but there was an unfortunate accident with my bowl so I had to make do.

Then add in a chopped red onion

Add the defrosted veg

The give it a good old stir

Get about 4 tbsp of fat free yougurt and mix it with 2 tbsp of curry power

I like it hot but mild curry powder can be used instead of you don't like it too spicy.

Add that mixture to the pot and stir in.

Make sure it is mixed well together

Then add the cooked rice and a raw beaten egg (the egg can be left out if needed)

Mix again till it is all combined

Then make the mixture into balls and places them on a greased baking tray.

Pop in a 220 oven for 40 minutes and volĂ a tasty health snack

Serve with a bit of tzatziki to balance out the heat.

Now they are super delicious and fun to make.

So I hope a few of you give it a go.

Right I'm off to back for Amsterdam so excited.

Also of course they be a blog, but do check out my Twitter account @dyslexiccooking or my YouTube channel for not only the Vlog this recipe
https://youtu.be/XZV6jkZL5Rw but mini Vlog from throughout my trip.

Sorry but hey Cocktails

Hi guy firstly apologies that I haven't posted in a month just, been super busy with my new job and other things but now I'm back in full effect

Firstly my friend bought me this awesome watering can.

I have decided to named Lady Florence of Anglesey. Yes I do like to give my inanimate objects crazy names

Oh and one night I came home this week to this from my Darling Husband as I was having a bad day.

So I went for a night out in town with my mum, to go and see Motown in the west end, ooh posh.

Firstly we did some window shopping and I got a fab pep talk from the Libery Window

After that we went to a fab bar/restaurant called Portraits at the top of the National Portrait Gallery it's got a fab view and even better cocktails.

We had some martini straight up
And a fab Earl grey tea margarita

The staff was so nice they even gave a taster of another cocktail they do.

We then went on to Mr Foggs Gin Bar

I loved the drink called 'Old Fashion Fanny' which in the UK has hilarious conitations

But in the end when for a gin base cocktail which was okay although a bit too sweet for me.

Loved the presentation in the old beer glass

They even give you the bill in a quirky tin

Then on a futher walk around we ended up going by a gallery which had the Bansky Dismaland art which as a Disney fan is cool

We then stopped for dinner in Zizzi where I enjoyed a fab Pinot was going to photograph my food but after all the cocktails was so hungry.

We carried with a few drinks in the Theatre and by the way Motown is awesome.

But as it was a very late night needed a midnight snack on the way home. Why does drinking always make me want to eat bad food lol

To end the week I treated myself to some fab hotel chocolate

And as the sun came out for a bit a nice cold cobra beer

But tomorrow it's the Kent County Shoe so I'm going to blog Vlog and hopefully periscope

Farmers market munchies

Hello Everyone!

How are you doing? Hope you are all well, yes? good!

Well I'm feeling better now was feeling a bit poorly ("Aww", thank you for the concern lol). So I went to the only cure for sickness - Honestly I think Doctors should recommend it - Heinz Cream of Chicken Soup. I have been having this when I'm sick ever since I was a kid makes me feel all warm and toasty inside.

This week I would like to dedicate my blog to my local Farmers Market in the little Town of West Malling.

So for those of you who don't know or didn't read my Bio (Fores-shame) I currently live in Kent which is known as the garden of England - and why yes it is very green a pretty and there are a lot of farms and fresh produce producers around.

So once a Month, the last Sunday of every month, the close down the High Street and we have a market.

It was a bit grey and rain but as a family we ventured out.

For a small market they do sell a lot of stuff of different varieties. I do normally love McCarthy's bread but by the time I got there they had already sold out of the roasted pepper focaccias bread (Super sad faces in our household I can tell you)

And my favourite cookie stall "Thomas Cookies" was there, I even have a loyalty card saving up to get a free cookie which will probably be on my next trip!

And stall selling meat, fish, cakes, Indian food, drink and even a knife sharping dude - But as I don't normally carry my kitchen Knifes out with me I couldn't really use the service lol :)

Total side bar issue, as my blog wouldn't be my blog without me go off on a tangent! But the West Malling Tesco have totally upped their America Food Game - Reminds me of holidays and fun Although it is mostly verging on the sweet side could really do with a couple of savories like Mac-n-Cheese that orange kind you only get state side yummy.

Back to the market, we had a great time looking at all the stalls and having a chit chat with the producers think I might have to periscope it next time.

I got some lovely treats to enjoy at home.

the first was an onion bhaji - I was so useless and didn't get the name of the stall I promise if they are there next time I will get a snap and the name and they where doing curry also, so will need to try that.

Oh and of course got cookies - 3 to be exact, 2 chocolate chip ones for the Hubby and I had the oat and raisian one, I pretend as there's oat and Fruit technically it a health food lol - Well all I know is they are so tasty, very moist and chewy - Glad I only see him once a month as the diet is already awful so the last thing I need is ready access to more cookies.

Sorry for the gratuitous shot of my bitten into cookie, but my god it was scrummy!!! mmmm cookies

We picked up some precious porkers sausages, they had some out for people to try. I thought they were great, the Husband thought they were great, but the total seal of approval came from the little one we gave him a try and he wolfed it down, he even wanted a second bite.

So with that resounding success of a tasting we had to get a pack, also the good thing is the pig are hand raised and really looked after which is good and is reflected in the taste.

We even got some Scotch Pies form Sussex Pies

Now I've never had a Scotch Pie that wasn't in Scotland, but I'm alway up to try new things.

So we have it the way the Hubby family who are Scottish have them with beans on top.

And I can say it taste exactly the same (might even be a bit better) as the pies I have had north of the boarder.

The Hubby gave his scottish side seal of approval too :)

Picked up some fab meringues too, didn't get the name of this stall either but in my defence I was going to but at that point the heavens opened so need to get to cover to get the little one out of the hail - yep the spring weather in the UK has been utter crap.

have to say it was a nice meringue crunch on the outside and a bit chewy on the inside the only issue I had was it was supposed to be chocolate but didn't taste chocolaty at all.

And the last item on my list was some lovely Rasberry Gin (Had to get the small one as they sold out of the bigger) although the lovely suppliers Wild Spirits of Kent will definitely have some more in at the next market yay.

had it with some soda water and it was lovely Although glad I got the small one as it went down far to easily lol

So a great trip to a great little market, and its always good to buy local and you're helping a small business and your also helping the environment,  as you not getting the food miles you get from some products you pick up in the supermarket.

so if you have a farmers market near you please go have a great time exploring and you might even end up with a few lovely little treats like me :)
